Rack of St Louis Ribs with Wild Willy’s rub (recipe card in pics). Ran on apple pellets, my new favorite for pork. Put some apple juice in when I wrapped. Took the IT to 190, then sauced. Pulled once sauce was set.
Came out just like I like them. Not quite fall off the bone, with still a little chew & pull.
