1300 - Temperature Swings & Somewhat Max Capacity…

I ended up trimming about 2” from my full racks to fit them on the grill - to about 16” long. I get that I could have used all three racks, but I’m still somewhat new to the Traeger and fingering out the temperature ranges. I’ve traditionally placed the ambient grill temp probe on the bottom of the bottom rock and have seen massive swings in temperature between what the Traeger reports and what the FireBoard reports.

Heat rises, I know, so for this cook, I removed the middle rack just to give me better access and I placed the FireBoard temp probe on the bottom of the top rack. It’s surprisingly reporting very similar data as the Traeger itself. I’m definitely cooking according to internal temperature of the meat, but I thought it was interesting there would be such a difference in reported temps… remember, I’m somewhat of a newb at this.

I have some folks coming over this afternoon and thought we could do a rib extravaganza, so I bought eight full racks from the butcher. I wanted to cook everything on the main level of the grill, again having removed that middle grill. In order to get them all to fit, I did trim the ribs - taking 1.5-2.5 inches - 1 to 2 ribs - off each rack. Sacrilegious, I know. But I got seven racks on the bottom grill and put another on the top. If I wasn’t giving myself room to work, I’m guessing I could probably get 15-16 pretty decent racks into the grill. We’ll see if I have that many people come over later in the summer…!

I’ve had this grill for about a month and have done 5-6 cooks on it. The ribs can produce a lot of grease, so I added a couple of pans below the 1st grate to capture the grease. I dislike the grease capture system on the 1300 - the little bucket hanging on the side of the grill for the other models makes it pretty obvious when you need to check/change the grease bucket. I make it a part of every pre & post review of the grill, but still it would be nice if the trap on the 1300 was easier to check.

Also, as a quick postscript, I did think it was pretty cool that the Traeger sent me a text when the preheating was done - as I was screwing around in the Target down the street.

And the finished product… 8 racks of ribs. Not one bit left after we got into ‘em.
