and cream cheese. One with Kinders brown sugar rub and honey, the other with Williams Cajun rub and topped with Fisher and Wieser Raspberry chipothe sauce! Yummm!!

All those butts smoked on Friday night were pulled and seasoned Saturday and placed in the fridge after cooling down a bit. This allows all the juices to congeal before I bag and vacuum pack.

This is now ready for reheating this Friday for an event I'm catering. I will put these bags in a cooler and warm up with a Sous Vide heater. No Fuss No Muss come Friday and no stressing on getting the BBQ done while I'm on the road for work.

YUP!!!! it was fun, good to see my niece and everyone ate good!!!
now I just Vac Packed 2 meals for the freezer and that's after everyone went home with some... BOOM
 
Cream cheese , smoke for a couple hours with a rub, sauce if ya want, eat with crackers, tater tots etc for an appetizer. I was skeptical but it was pretty good and didn’t last long.

Wings Showdown!
MC holy Gospel, Stubbs Chicken, and MC Holy Voodoo.
Dry rubbed ten each in the above rubs. Then I sauced them 1/3 hot sauce (franks and butter), 1/3 bourbon BBQ (Jack Daniels and Bullseye), and 1/3 no sauce.
Cooked them all at 375’ for 40 min (flipping at 20 min). Sauced them up and back on the Traeger for 5 minutes to tack up.
They were all great! I couldn’t pick a favourite.
 
Just pulled out 2pks (3ea) frozen Costco’s Foster Chicken Breast. Not sure if I’m gonna smoke them or grill them yet.
Still looking for a whole turkey to smoke it before Thanksgiving.

Replying to my own on whole turkeys. Called all my local grocery stores and Costco/Sam’s and they won’t get their whole turkeys in for another week to 2. I didn’t realize we were turkeyless here in Southern CA.
 
William's Rib Tickler wings tonight. Been a while. I usually buy wings in a 5 lb. bag at HEB. They used to be around 10 bucks a bag, but today they cost $13.30. Sheesh. Inflation is in your face these days.
