What's for dinner tonight? Dinner ideas?

Smoked some Jalepanos Poppers again on the Timberline 1300. Modified my usual filling formula of cream cheese and mozzarella and added also some crab claw meat. Maybe had too much crab meat (winged the portions) but I think most people thought they were good but preferred no crab meat. Here are before and after pictures.

I love all the bacon weave wrapping, but I do have a question. Is the searing really necessary? I am not a fan of burnt bacon bits.

Wife likes bacon well done. I like it done like it was before I seared it, but I can eat it either way. Sooo, I seared it to crisp it up..
 
With all this talk about searing a bacon weave, I got to wondering if a torch would work for the final crisping instead of trying to roll it around on a gasser.

Maybe, but the back side of GrillGrates works pretty darn good. Took about 15 seconds.
