Today is my nieces 16th birthday and we
Had pre planned a family party. She loves my pulled pork and I normally always have some in vac bags in the freezer, so I thought. My surprise I didn’t have but one bag and it was almost 10 pm last night. Lucky the grocery store was open until 11. So I went and got a butt put it on my 780Pro by a little after 11. I set it on 250 and by 11am I wrapped it and put it in the Yeti. At 3pm everyone enjoyed it. For those that are new to pellet smoking, it’s so very simple and I slept great last night without having to even think how the butt was doing. I use a Meater probe but I don’t take my phone to bed with me because I know my Traeger always has my back as long as I fill my hopper full it will go 12-24 hours. So, I'm sorry so long of a post I just want newbies to not stress cooking pulled pork, it crazy simple. I open the package, rinse the butt, patted it dry, coated with mustard then two different rubs. I use an after market grate elevated above the main grate, I’m old fashioned so I support it on bricks broken in half. I put a drip pan filled with water on the bottom/main grate and I use a smoke tube and two modified smoke boxes to achieve the smoke flavor this South Carolina guy likes. I pulled it at 198, double wrapped in foil and rested in cooler a couple hours. This is simple and basic but I can compete with taste and texture of any of my local BBQ establishments on pulled pork with cooking just like this. Finally I’m done!! 😄

Who’s up for some Chex mix? I loosely followed the directions on the box and smoke this for a couple hours at 200f. This was so dang good!

I got a fresh never frozen brisket from a local locker. Price wasn’t to bad either. Was the best brisket I’ve done to date!

Picked up 5 prime sirloins from Costco for about $40. Cooked 2 tonight at 500 degrees. Here it is
