Vacuum seal question

I vacuum sealed a few packages of shrimp fried rice, which I'd cooked on the griddle.
Forgot to put it in the freezer for about 5 hours , at around 70 degrees room temp.
...
I immediately put it in the freezer when I noticed, but that was 5 hours after sealing them.
...
Need some advice whether it's still safe to eat

post cooked... I'd say your okay.
When you reheat just make sure you reach 155-160 for a couple minutes and everything should be safe.
 
Thanks, I was thinking that, but hoping for others to agree....yep...post cooked...freshly out of fridge when I sealed them
....still can't believe I forgot to put them in the freezer

Do you have a Sous Vide circulator> Since you are vacuum sealing leftovers, Sous Vide is great for reheating.

If the shrimp had not been cooked, then you might have an issue, but it it was cooked properly, that should have killed most pathogens., Since the food was vacuum sealed, you have very little oxygen to promote growth of bacteria. Thus, you should be fine. Just make sure you reheat to a minimum of 160F and hold it at that temperature long enough to insure that the contents are heated thoroughly.
