Hi all,

I'm attending someone else's BBQ / picnic tomorrow and want to take chicken thighs. Once cooked here in the morning at home, they'll be packed into a cooler and driven a half-hour. Figure another half-hour at least for the packing, unpacking, etc. There won't be any available cooking facilities at the destination.

At home, I'd cook and serve them with the skin, sauce on the side. But I'm not sure what do in this case. I can't imagine that there's any way for the skin to be crispy, and rubbery skin is - to me - unacceptable. So I'm looking for recommendations on how to prepare, cook and pack the thighs to get the best experience at the picnic.
