Timberline 850
Hello. I’m new to smoking and just got a Timberline 850. I smoked a 12 pound brisket that came out really well and then a chicken that was also good. We’re having a party and will need about three briskets. Can anyone tell me how much longer it will take than smoking one brisket?

Since it's low and slow, the grill can maintain the set temperature. Also the 850 has great circulation so it should be pretty even. I'd expect similar cook time for all three. I would shuffle them occasionally, and monitor them separately as they will cook slightly different.

Since it's a party, my preference would be the overnight "Weekday Brisket" method to ensure them being rested and ready!

I don't think 3 will take any longer than 1, but all three will be done at different times.

I agree on swapping positions, perhaps after the stall, when you wrap (if you are wrapping). Good luck and make some burnt ends while you're at it 😁

I'm doing 2 at once soon... I expect them to come off at diff times. that's ok with me, while I'm messing with one the other can finish or 'rest' till I get to it.

I chickened out on doing the burnt ends last time. I wasn’t sure what to cut off. 🙁

I’ll be doing my first brisket (2ea) tomorrow night. Using my own rub seasoning but using @RoadRunner18 smoke times. Starting at 9pm. I’ll pick up 2 15-16lb brisket at Sam’s or Costco in the morning and spend time trimming and seasoning it. Looks like Sam’s is a little cheaper per pound.

I plan to begin smoking my brisket tomorrow night at 9 pm as well. I am justing doing one 13 lb Prime Costco brisket, using only salt and pepper. I can post my Fireboard progress if you like.

When you say Fireboard you mean the Fireboard Temp probes? I was at Costco Business center a couple days ago looking at briskets and the prices. I didn’t see any Prime. Only Choice. So tomorrow morning I’m going to check Sam’s for Prime. If not then it’ll have to be Choice. I’ll try to post my progress as I smoke.

You can share the complete FireBoard data from a session with everyone. See the posts on this thread:

I am guessing they were sold out because Labor Day is approaching. This happens at my Costco as well and I always buy ahead. My brisket was purchased last month.

There’s been a slight change in plans for my first great brisket smokeout for this evening.

Yesterday afternoon the missus and I decided to try our luck on going to the Big Island of Hawaii. Yup, and here we are in Kona. Arrived at 11am this morning, Hawaii time.
So my brisket is postponed till next Friday while I enjoy this beer and take in paradise.

Aloha! 🤙🏼

Primed and ready for Friday.
Back from Kona. Went straight to Sam’s. I was shooting for 15 or 16lbs. Close enough.
