PRO 780
installed a smoker to my Pro 780. Works very well. Adds just the right amount of smoke these pallet grills are missing.

I use it on every smoke I do without fail.

Here is a video of it running. Highly recommend this modifaction to get a very close to offset smoker flavor.

A lot of that flavor you and I are used to is due to the charcoal and wood chunks... not necessarily just 'more smoke' from pellets.
I just pre-smoke all my cooks now on 180 for 30 min then crank up to normal temps... I'm also thinking about putting 3 coals in a wood box for that charcoal flavor but so far I don't deem it necessary for me... and I've been offset smoking and drum smoking for 15 years

Is that a fish pond pump???

Looks great! That model looks like a cross between the Smoke Daddy and Smokin-it units. Clean install.

Agreed. I will make sure I run things at a lower temp on Super Smoke if I want more smoke flavor. It only makes sense - lower temps produce much more smoke, and you'll get that flavor on your whatever you're cooking.

I like your idea of just low temp pre-smoking things you want more smoke flavor on. I did install a generator on mine, but specifically to cold smoke things. I LOVE cold smoked salmon and can now do it, as well as cheeses and maybe some salt.

Since I don't plan to use it a lot, I made up a cap to keep the regular cooking smoke from blowing backwards thru the unit when not in use. I was surprised at how much stuff did blow into it.

Looking from my PC now, the Smokai unit looks to have the exact venturi tube and air pump as the the Smoke'in-it units have, right down to the unique way it locks into place. Looks like Smokai is a New Zealand product and Smoke'in-It is USA based.

And YES, I too am a Big fan of cold smoked salmon... maybe someday for me...

Its an air pump thats included with the smoker. Has a high and low setting.
