I cooked a Pork Neck on my Traeger Ironwood 885 and the result was excellent.
The Director of Social Affairs has now decreed that this will be added to the favorites list.
Traeger was set to 110C
Traeger Apple pallets
Pork Neck 1.5Kg
Dry brine 12 hours before cook
Generous coat of Rub, 2 hours before cooking
Rub: Memphis Dust
Makes about 3 cups
3/4 cup firmly packed dark brown sugar
3/4 cup white sugar
1/2 cup paprika
1/4 cup garlic powder
2 tablespoons ground black pepper
2 tablespoons ground ginger powder
2 tablespoons onion powder
2 teaspoons rosemary powder
Cook stopped with Internal temp of 70C
Wrapped in foil and a towel placed in Esky for a couple of hours (Family wasn’t ready to eat)
Cook time 5 ½ hours
