Ribs Question

I have made the Traeger 321 ribs twice and they were delicious. But they didn’t fall off the bone. What am I doing wrong?
 
For me, I found that with my modified 321 method, I can get them to fall-off-the-bone finish for friends and family members who prefer, by leaving the ribs wrapped longer.
