Smoked at 225f for about an hour to 125f then seared in a cast iron pan. I would have done a little lower but my baby boy loves steak. I used traeger gormet pellets I got from Costco (haven't seen them anywhere else) which is a maple hickory cherry mix which gave it a bit of a bacon flavor. Used a smoke tube to get a bit extra, was amazing
