Greetings. I'm new to pellet grills and recently purchased a Ranger to add to my grill/smoker collection. It hasn't arrived yet (this week) but I noticed that it comes with a cast iron griddle. The manual says that I can cook breakfast items like pancakes on this. I'm curious, given that in the pictures the RTD sticks right up into the air, how I would use this with the lid open. (I can't imagine making pancakes with the lid closed). It seems like there would be absolutely no temperature control and within a short period of time, the griddle would overheat and burn my pancakes.
Can anyone more experienced enlighten me here? I'm sure bacon and hash browns could be cooked with the lid down but I'm not seeing eggs and pancakes happening that way.
