Question about temperature

Hi all,

I’m new to the Traeger family and wood pellet cooking. I have a Pro 22. The “smoke” setting on this model typically sets at 175-180 degrees. When a receipe on the Traeger site says to set the temp at say “275”, does that mean I don’t use the smoke setting at all, simply just use the grill temp? Will the meat still smoke, or just simply cook?

Youll get the wood fired flavor in the food being cooked and yes there is of course smoke as its wood burning, but the smoke flavor with be very little compared to a lower temp. What are you plannin on cooking??

Well if you cook it at 275, keep in mind is a convection oven with very dry air and it can dry your brisket out so it may be worth while spritzing it and certainly wrapping it.
Otherwise, I rock 165F for a few hours to overnight(depending on brisket size) and turn up to 220 for the rest of the cooking time till its done! You can also get a smoke tube, itll help with smoke flavor at higher temp cooks!
