Pork butts seasoned up for my bday cook tomorrow. Gonna start them about 2am tomorrow morn.

Nice, bone in? Do you rub down with oil first or just season?

Yes always bone in I think boneless suck. I rub down with mustard and then season. These guys are seasoned with traeger pork and poultry.

6 hours in just transferred to foil pans to catch some of those juices. I like to pour the juices in a fat separator and then back over the meat after it’s shredded.

No just depends on if I’m home and what’s going on. I wait a minimum of 3 hours though so I get all the smoke I can to them.
 
So I don’t have a great pic of the finished product. Started talking and eating and drinking and it was all history after that. I used all apple pellets this go around along with my smoke tube. I never get the smoke I want on my butts so I decided not to wrap this time. Still felt the smoke was mild even with the smoke tube. Gonna try different pellets next time and keep tweaking. I pulled at 190 IT and wrapped foil over top the foil pans and let them rest for about an hour and 15 in the cooler and threw a towel over top to insulate. Bones came clean right out and all my friends ranted and raved about the tenderness and taste. Guess I’m just a little self critical and really want it to knock your socks off. I learn and tweak something every smoke.

Nice job, thanks for taking the time to let us know all the details on the cook. I find it interesting and I'm sure it helps others. I'm always trying to make adjustments and improvements to improve my food as well!
