Hi all, long time bbq'er and proud new Traeger owner.

I've had a few successes so far and keen to try a rolled pork loin. Interested to know of cooking options / methods to slow cook but also achieving crackling without overcooking.

I have an entry level Pro 22

Thanks in advance

I've done pork loin successfully, starting ~200F (Super Smoke if you have it), taking the internal temperature to 120F and then finishing it at ~400F until it hits an IT of 145 or so. This is a modified version that Mad Scientist BBQ does here: Mad Scientist BBQ

One thing that might hellp is spritzing the pork with a mixture of apple cider and apple cider vinegar. That helps keep the meat moist. Doing it around once per hour should be enough., Remember, when the lid is open, you are no longer cooking.
