New to operation

So, I am new and would like to know the correct operating sequence of the grill. I sort of inherited this from my younger son and I replaced the control unit to have two probes, replaced both fans, the temp sensor and the pot and heat rod. Right now with pellets in the hopper, I turn it to the 'on' position, then to ;smoke' (induction fan comes on and pellets fall in the pot); I wait til I see a quantity of smoke coming out (on mine it is like a minute or so) then to a low temp for 5 minutes or so then I up it by one or two notches in temperature to the desired cooking temp. After getting to 225 is the induction fan supposed to work ALL the time or just on and off in conjunction with feeding pellets to keep the temp up? The temp gauge when set at 225 will read at about 240-250. At 300 it read in the 320 range? What is the normal range without wind, a cold or hot day factored in?

So the questions are,
1. does the induction fan work all the time or part time, and
2. does the control system purposely hold a slightly higher temp or is it a bad sensor?
3. is the second fan, the one on the auger motor, supposed to turn all the time or just part of the time?
4. is there a suggested or recommended system of raising the temp? On, Smoke, then right to 300?? or gradually move up?
 
I hope I can help on a couple of things. On my old 075, the induction fan runs continuous, and the auger fan only runs when the auger turns on. Mine also runs about 25 degrees hotter than the setting on the controller, which isn't a problem if you know that. If you go on line and save the operating instructions for your specific model it will give you the recommended warm up time prior to moving to your final temp. On mine I gradually move my controller temp up and allow it to stabilize but that's just what I am used to. I have to say that I don't use mine for a grill, only smoking and mostly low and slow. Welcome to the site, there are many good folks here and all with great suggestions on how to enjoy the world of smoke.
