Using a Traeger Century 22, I've smoked a spatchcocked a turkey for Thanksgiving for the last 4 years with great results. This year, Thanksgiving day was windy but not cold (70 degrees F) The smoker, set on the highest setting would only reach 320 degrees. After 1 1/2 hours, I turned the setting down to 350 degrees, and still it held at 320 degrees. The turkey turned out great, finished at 155 )in the coolest part in the breast). I used a torch to brown and crisp the skin while the bird rested. Was it the wind that kept the cooker from getting hotter? Is there an issue with the temperature control system?
