Currently seasoning, getting ready for Christmas brisket. Placed probes next to smoke stack (1), middle (2), and near side box (3). 1 and 2 are relatively even about 10 degree difference. 3 is about 130 degrees hotter. Lowest temp running at @ 350. What can I use to get temps down on 3 (off the rack) while I get something better suited.
 
Nice stick burner. You need to shut down your vents as you have too much fire for smoking a brisket. It will take a while unless it's cold where you are. Damper it down and once you have a nice bed of coals and the temp stabilized, add small amounts of wood to keep it there.
