Heat Drops

Hi Everyone,

Wanted to get some advice my Traeger drop temps quickly. Seems like any low to mid temp cooks are really tough to get a consistent temp to hover at.

For instance, today I am cooking a 3 lb roast to make poor man's burnt ends. Recipe calls for a 275 cook. As it's cold today (30° here in Wisconsin) I set the initial temp to 300 b/c I know the issues I've had. Temp came up just fine so I put my roast on quickly and got the lid closed to avoid a big heat loss. Temp hovered back around 295 - 300 so I set my temp back to 275. Let it do its thing for a few minutes and when I checked again it was at 235 and dropping. Set the temp back to 300 and came back about 30 min later and it's back 294.

Any ideas or tips? It is around 30° today but no wind. The smoker is clean. I clean the chimney and burn pot after every use as well as empty the hopper. I'm new to the smoking game so I'm just trying to get a little clarity. Should I not drop the temp like I was doing or is the thermometer inside possibly damaged or defective?
