This is a great cole slaw that goes well with any BBQ, especially pulled pork when you add it to the sammich!
Ingredients
2 bags shredded cabbage
1/2 red onion - chopped
1 bell pepper - chopped
1-2 Jalapeno peppers -minced
8 oz light olive oil
8 oz. red wine vinegar
Sugar - to taste
BBQ Rub - to taste.
In a large foil pan, mix the cabbage, chopped red onion chopped bell pepper, and minced Jalapenos
In a half liter water bottle, add the oil & vinegar and shake to mix well, then pour over slaw mixture.
Sprinkle BBQ rub & sugar and mix. Add as needed to taste.
Ingredients ready to mix. Just mix the veggies, shake the bottle of oil & vinegar, pour over and mix well.
After mixing, sprinkle your favorite BBQ Rub and some sugar and mix well. I usually do 3 passes of sprinkling, tasting as I go.
Finished product ready for serving.
