I'm cooking my first pork butt on a new Century 885. I've been using Little texas for years. At 165 internal temp, I took the butt off, injected it with apple juices, and wrapped it in tin foil. It's been on for an hour wrapped and the internal temp is only 121 degrees and rising slowly. Is this normal? The temperature seems to be rising very slowly after wrapping. I thought the opposite would be true? Thanks!

Whats grill temp?

Im assuming your injection was cold?

When i inject i keep the liquid on the grill so it is hot, in stainless cup or bowl or tin vessel.

Was the injection you added at 165 warm or cool? That may have effected temps downward and the internal temperature and would need to be heated up again

You beat me to it, thats exactly what happened!

Yeah, I think what caused my problem was the cold apple juice. I'm back up over 170 and headed into the final hour. thanks for all the advice!

If you have to, turn it up to 300f. Im guessing at 275f its still gonna take a couple hours to get to 205f.
