Have been using ONLY my Traegers since early February. I go through these phases, only use the Kettle for a few months, then only use the Weber gas grill, then only use the Traegers.

This last week was at our home where we have the Ironwood and made some ribs on Sunday and then some steaks last night. Used smoke mode for both. Ribs just followed simple ribs method and steaks smoked for about 45 minutes than seared on the new grill grates.

Both came out cooked great, moist and tender. Problem is they both had an initial beef jerky type of taste.

Wondering what I'm doing wrong all of a sudden. Too much smoke maybe? Too much Traegering?

Used two different brands and flavor of pellets on both cooks.

I find it hard to believe it’s too much smoke. This would be the first post ever claiming a Traeger produced too much smoke; nearly all smoke posts say it doesn’t produce enough. Maybe you hit a sweet beef jerky spot with your seasoning blends? Maybe too much salt like caddz suggested? Maybe it’s a combo of factors (smoke AND salt)?

I think it might be because you put too much salt. Did you do it again later? I want to know if this happens again?
