Cooking Times - Don't trust recipes

What I've found is often food is cooked much quicker then the times indicated. Thankfully I have the temperature probe and keep a close eye.

Yes low & slow is usually not far off (some a little longer, some less, but takling 10-12 hours+), but often I've found roasts cooking much quicker.

Yesterday I did a boneless leg of lamb. I like all my food medium rare & once venturing toward medium I'm upset. The instructions were 30 minutes at 500 & then 60-90 minutes @ 350.

The 60-90 is a pretty significant variance to start, however the roast was ready in 75 mins max.

Seen the same as said with other recipes like ribs & sausages too.
 
Go by temp not time, there is a temperature gradient on most grills ( higher on the Left, use an external calibrated probe (Like a FB2)).
Food is cooked to Temp not time.....
