What do you mean by “ different “ ?
 
What is different? I buy full packers from Costco and from a butcher here on the island and they both appear the same to me. If the butcher doesn't have his in cryovac, it's surface will look different as the air changes the surface color a bit. A lot of butchers are selective and will only take AAA or higher and pick out well marbled cuts. Box stores take what they can get. You have to watch to see if it's AA or AAA beef.
Let us know what you are seeing different between the two?
 
Maybe he’s talking about the difference between a packer and a flat or point.
That’s what came to my mind when he said “look different”.
 
why does my fresh brisket from the butcher look different from what I get from the big stores
