I’m looking for advice on cooking a Cajun spiced turkey, brine, rub, etc. I’m thinkin spatchcock.

How to Make Homemade Cajun Seasoning​

You can make your own Cajun Seasoning using the following:

• 1 tablespoon paprika (I prefer smoked)
• 1/2 tablespoon garlic powder
• 1/4 tablespoon ground black pepper
• 1/4 tablespoon ground white pepper
• 1/4 tablespoon onion powder
• 1/4 tablespoon ground oregano
• 1/4 tablespoon red cayenne pepper
• 2 teaspoons ground thyme
