Got this recipe from a friend.
You will need:
Pack of brats
Container of blue cheese crumbles
Pack of bacon (thin slice)
Wood toothpicks
Start by cutting open the brats & creating a cavity inside the brat by pressing the meat together. Fill cavity with blue cheese. Wrap brat in bacon to enclose cheese (will probably need 2 strips per brat). Secure ends of bacon by skewering to bear with toothpicks on both ends.
Get your T running at around 225-250. Let them ride for about an hour. You can turn or flip them but at this point it doesn’t matter.
After an hour, crank it up to high & pull brats till you reach temp. Return to grates, and check & turn often to crisp up bacon 5-15 minutes, dependent to personal preference)
Pull toothpicks & enjoy!
These came out really good. Next time I am going to either find some brats without casings, or remove the casings from the store bought kind. I found the casing in the middle, under the thickest wrap of bacon did not crip but stayed soggy & chewy.
I might also try some pepper jack or fontina in the future.
