I've been using Thermoworks MK4 for a while and before that the MK3... That 2-3 second readout time is only for the initial heat up, once it is stuck into the meat and up to temp, it will change the temp reading almost as fast as you can pull it through the meat, allowing you to see the temp variation all the way through whatever you are checking. You do not need to stick it in, wait 2-3 sec. then move it a little and wait 2-3 more, etc... I have not found anything better. They have sales through out the year, many times. You can usually find them around $74 during a sale. Worth every penny!
