Beef Ribs ...... Rub?

Hi all , I'm new to this so ...

I purchased a 575 before Christmas and have been working to get good results ever since this is my 7th grill after many fails especially with brisket however I finally came good with some beef plate ribs this weekend ...

7 hour cook , Ribs were just over 2kg rub was the coffee traeger rub and extra salt and pepper, pellets mixed smokin pellets , 3 hours at 225 till 180 the. Wrapped in butcher paper , upped the temp to 275 till 205 f and rested for an hour in a warmer

Results were very good , super jucy and tender finally !!! But not majorly flovorsome

Any ideas on a run that can really lift the flavor would be appreciated

Is the flavour that you are missing smoke or spice? If smoke, you could use smoke tubes (I don't think the 575 has "super smoke").

EDIT: they look amazing, by the way!
 
Sucklebusters 1836 rub and beef tallow in the paper when you wrap for both flavor and moisture. Also, I would cut between the bones then remove the meat on each individual bone and then cut across the grain in lieu of with the grain as it appears in your photos. I bet it was tender enough either way though. Beef plate ribs are a delight!

I would say spice , just I've seen a tone of videos that say if your on a pellet smoker u may have to go heavier on a rub compared to a offset

I stand corrected maybe. It looks like you cut against the grain. At first glance i didn't think so. I still usually cut mine the other way and make kinda burnt end bites. It should be basically fall apart like a pot roast. My apologies.
 
i also had a question about pellets, i have been using Cookin Pellets after not having the best reuslts from the Traeger ones that came with the grill , i still feel that the flavour is lacking slighly but its a marked improvment, ive used the mixed and the hickory ... any recomendations ??

ash content wiht the cookin pellets are not ideal but the burn rate is alot faster , ive got through 2 5 kg basg total cook time around 25 hours
