I prefer a st. louis dry rib myself.

I like a 250 super smoke for about 2.5 hours, wrap when there's still color and go for about an hour at 275, just look for the right bend. Then let sit for about 20 minutes.

Glazing is good at this point too. 30 minutes light glaze with like a peach jam, honey mix perhaps with a splash of chili heat....

I like to super smoke mine at 225 for 2 hours give or take based on the color. Then I turn it up to around 275 and wrap them in foil for about another 2 hours to desired done ness which is fall off the bone. When I wrap them in foil I place the ribs on a light bed of brown sugar and usually add a lil bit of liquid like beer or apple juice. I don’t always sauce them but when I do I like to do a low heat for the last 30 min to an hour to really carmelize the sauce on.
