16 pound pork shoulder cook time

Howdy,

I am going to throw a ~16 pound shoulder on the Traeger for pulled pork and the plan is to cook at 225 until IT is around 160 and then wrap, bump grill to 275 and finish the cook until IT is around 203.

How long do you think it will take? Never done one that big!

Maybe 30 mins per pound to get to 160 IT?
 
Cut it in half, use 2 8lbers, more bark and easier to determine the IT cuz your center is smaller.

That's usually the "stall" temp, you don't wanna disturb the meat during a stall or you will double your wait time... I don't "wrap" pork butts or shoulders, but if I did I'd wait till probably in the 170s after the "stall"

I was in a hurry when I bought this at Costco and wasn't paying attention. It turned out to be 2 ~8 pound boneless. Oh well, it's on the Traeger and looks good!

@Slimpicker, I like to put the shoulder in a foil tray and cover, mainly to capture the juices. I'll pour those into a fat separator and pour over the shredded pork along with a hot vinegar sauce.
