Im going to be catering a friends party, it is about 35-40 people. How many pounds of pork shoulder would y'all recommend cooking? I was thinking somewhere around 18

I would let the griddle heat up for 10 ish minutes once the grill is up to temperature at 450. just Because the grill achieved 450 doesn’t mean the griddle did in that heating time. Also the grills name change should help lol
did you let everything heat up for an appropriate amount of time? Griddles and cast irons can take some time to get up to desired temperatures some times.
How many people on here are going to get a new thermapen just because it’s newer? I might be guilty but I’m trying to talk myself out of it since it seems so similar to the mk4 with minor fine tuning.
They sent me their TP27 unit to use/review and it has been solid so far, temps have been within 5 degrees of my thermapen mk4 so far. Can’t say I would use/trust it when cooking a nice steak, but for longer cooks I think it is a good tool to have so far. I’ll post my promo codes later if anyone...

Royal oak lump charcoal works and is affordable, if you want to spend more I really enjoy B&B which can be located at most ace hardwares. Look into getting a vortex attachment and you will have wings that triumph Traeger wings which are pretty damn good as well.

Love my Weber kettle, i Honestly use it as much as my Traeger. Which kind of hurts because I bought my kettle on marketplace for $65 and you guys obviously have an idea how much an Ironwood cost in comparison
Some of best ribs i Have made actually came from a tip in one of Michael Symons books. He does his ribs at 300 for roughly 3-4 hours on a stick burner. I did 1 hour at 200 super smoke, then did 300 the rest of the way and they were fantastic and I will post a picture later
