What's for dinner tonight? Dinner ideas?

Not smoked, but talk a while back about pastrami had me thinking about making corned beef.
Come next summer I will do this again and make it right through to pastrami.
Meathead's recipe for corned beef.
I would probably let it brine 7-10 days next time.
I used two methods to cook it. Boiled the flat and pressure cooked the point. Next time I would pressure cook both. Quicker, easier and by far better flavor and texture

I know it's not smoked, but from corned beef you can take that to pastrami as a next step.

Question on Corned Beef. What is the best way to cook one? The last one I made, slathered on a honey mustard based coating. It looked great but was not rendered, tough and pretty sad.

So, is it cooked like a brisket? low and slow to 160F, wrap to 203F something like that?

Pardon if I asked before, it's not in my notes, and I love good corned beef!

I would think handling like a standard brisket would work. Our weather isn't conducive to using the Traeger for any cooks that take some time. There are oven methods
I used Meathead's Corned beef and cabbage method for the flat, the other was a Insta-Pot pressure cooked recipe cooking on HI for 90 minutes for the point. I preferred the flavor and texture on the pressure cooked one. But instead of boiling, I'd try steaming it instead on any future attempt. I gave a portion of the flat to my mom and she is pressure cooking hers. Will wait and see how the flat turns out that way

Why wouldn't you cook it the same way I did this one ... only Diff was I was going for a Pastrami ending....

 
OK, SPAM fans, if you have not yet tried this, then go directly to your store and pick up a couple boxes.

12 minutes at 425 on a grill topper in the Traeger and you have some serious finger food with very little effort. OMG. Tasty!

Their competition needle probes are so perfect for ribs.

Ribs look good! Apple watch app would be so cool, but the only Apple i have is wood and pellets. Lol

I fought iOS for years but it is simply the most stable platform. I'm clearly gear head, with countless apps from drones to home automation. Once I jumped aboard the ecosystem I've not looked back.

Yup, the only thing missing from those ribs was, another slab!
